Baked Brie with Maple and Pecans

Maple Pecan baked brie has been a go to appetizer since the first time I made it. It’s wonderful, not to mention wonderfully easy. Even back when the idea of making an appetizer would throw me into a cold sweat, this maple pecan brie stepped up to save the day time and again.

This baked brie is unbelievably good from only 3 ingredients. It hits all the right notes. It’s sweet and savoury, creamy and cheesy all at the same time. I like to serve it with small slices of baguette to dip in or spread the cheese on top. It can definitely feed a crowd, depending on the size of brie you use, just make sure to have several baguettes to cut up.

This can be fancied up by being baked in round boule of bread or sourdough. However more often than not I will make it in a small round ceramic casserole. An important trick is to have the baking dish the size of the brie round, or only marginally larger, so the toppings don’t side off but rather bake in.

Real maple syrup is a must. This recipe is more proportions and eye balling it than perfect amounts. And it should be baked until runny and combining in the centre.

Maple Pecan Baked Brie

200g Double or Triple Crème Brie Cheese Round (or adjust proportions and cook times for smaller or bigger rounds of brie)
1/2 Cup Roughly Chopped Pecans
1/4 Cup Real Maple Syrup
Sour dough Round (or other round loaf) – optional
Sliced baguette for serving (if not baking in loaf).

Directions

Preheat oven to 350 degrees.
Trace the round on the sough dough loaf, cut and remove the centre bread to the depth of the brie wheel. Chop up removed bread and set aside for serving. Then carefully slice down the sides of the loaf to the bottom, but not all the way thru (so they stay attached).
Place the brie inside of bread.
Place into a pie dish.
Or place the brie alone in an oven proof dish that is about the same size as the brie.
Mix the chopped pecans and maple syrup together.
Gently pour on top of the brie. Try to keep to the centre and top and not over the sides.
Add some more syrup for good measure.
Bake for 25 minutes or until the brie is gooey and spreadable. This can vary in baking time depending on size of brie and whether in bread or dish.
It is easy to check if the centre is meted by inserting a knife.
Remove from the oven and serve.
This recipe can easily be proportioned up or down, just adjust the portions and cooking time as needed.
If something else is cooking in the oven at a different temperature, it will be fine, just keep an eye on it.
If not baking in the bread loaf round, slice up baguette for serving.
200g Brie generally takes two sliced baguettes for serving
