With roasted pineapple and apple pie I accidentally created another delicious pie recipe from using what I had on hand. It was a bit of an experiment on pairing apple and pineapple together. I figured that apple often accompanies most fruit and berries well and accents not overpowers. Also they both have the word ‘apple’ in them. So there’s that.
I am usually a purest when it comes to summer fruit pies, jams and such. One fruit and one fruit only! But in an effort to try new things and never miss out on something delicious. I tried mixing the remaining blackberries, blueberries and peaches I had leftover after a weekend of canning. And it was so good! So good in fact, I might just have been (somewhat) converted into a multiple fruit kind of gal, because I have been thinking about this pie ever since I made it!
Blueberry pie is nothing new and a rather easy fruit pie at that. No peeling or dicing of fruit. Just a quick rinse and sort through of the berries. But I like to kick it up a notch and amplify the flavours by adding freshly grated ginger! It’s my ‘secret’ or unexpected ingredient I insist on adding to blueberry pie that is not in most recipes and makes all the difference!
This fantastic homemade pie dough recipe was handed down from my mother-in-law. I find it versatile, flaky and delicious. It also delights me that it doesn’t require a chill in the fridge unless one wants to!
Blackberry Pie is one of the more wonderful things in life. And ever since my mother-in-law was generous enough to share this gem of a recipe with me there has been no looking back!
Peach Pie. This is it. THIS IS THE ONE. This is my very favourite pie recipe. A recipe I can make from memory now. And the one that changed how I felt about pie. Also the one that quite possibly prompted me to start a blog. The one that I still remember the first time my mother-in-law ever made it for me. This is glorious, perfect pie.
